So one of the interviews made prior to the game release actually lists the arrangers for all CAP-JAMS songs, along with some(?) of the members that performed in each track: https://www.capcom.co.jp/sound/topics/cfc_capjams_ja/
There's also an english version of it available: https://www.capcom.co.jp/sound/topics/cfc_capjams_en/ but it seems to be machine translated since it keeps referring to Masahiro Ohki as "Kimura" and Yuko Miyata as "Mr. Miyata" among other weird TL errors.
Here's a breakdown of the credits:

I was really surprised to find each song was arranged by someone different. There's also some pretty neat commentary on each of their arranges on the page, it's a cool read.
Interestingly though, Megumi Nishimura is nowhere to be seen in the interview; not listed as a performer anywhere (which isn't all that surprising since I'm pretty sure not everyone is listed for each arrange) nor mentioned in any way whatsoever.

Also, unrelated to the CAP-JAMS arrangements, but Tsujino also mentions that the plan originally was to use actual classic funk and soul samples for the Menu music, but they were too scared of having to deal with copyright issues. Kind of expected given the circumstances, but I found it neat that this was the plan to begin with.
